Cibus Latitude
Cibus, the Latin word for food, reflects Atlas Latitude’s connection to Italy’s food culture, heritage, and the traditions that extend beyond wine.
Cibus Latitude works with producers, consortia, importers, professionals, schools, hospitality businesses and institutions, connecting credible product knowledge with education, partnerships and commercial applications.
We develop field research, education content, programs and commercial support for international audiences.
Cibus Latitude facilitates the understanding of Italian specialty foods through territory, production, culture and markets.
Why Italian Food?
Italian food is shaped by local ingredients, production methods, landscapes and traditions. Understanding the typicity of an Italian product or dish means understanding where it comes from, how it is made, how it is used within its region, and how its recipes and traditions are passed down through generations.
To better understand the two vast sources of Italian food culture, Cibus Latitude is divided into two chapters:
Terra — food from the land
Mare — food from the sea
Terra
Land-based products and traditions.
Terra explores Italian foods shaped by agriculture, landscape and regional practice. Its focus includes olive oil and balsamic vinegar; dairy products and cured meats; pasta, rice, pizza and other grain-based and bakery products; fresh truffles and mushrooms; preserved fruits and vegetables; gelato, pastries and confectionery; as well as other territorial specialties.
Mare
Coastal products and traditions.
Mare explores the foods and practices connected to Italy’s coasts and waters. Its focus includes, but is not limited to, anchovies, sardines and tuna; mussels, clams, oysters, prawns; as well as regional specialties such as bottarga, colatura d’alici, alici sotto sale and other preserved or traditionally processed seafood.
Field documentation and specialist knowledge can become masterclasses, reports, content, market support and client programs.
